摘要: 综述了食品活性包装用抗菌材料技术的研究进展及发展趋势,介绍了符合食品添加剂规范要求的抗菌剂、塑料包装材料的抗菌功能化技术,并指出在开发抗菌材料时应考量加工过程、食品种类、储存环境及法规要求等因素。

Abstract: Active packaging constituted a new technology for food preservation. Reviews in this paper were the antimicrobial agents, antimicrobial films, and bulk antimicrobial plastics used in packaging of a variety of foods. The development of antibacterial materials must be considered processing conditions, food type, storage environment and regulatory requirements.
