Mechanisms of Action and Development of Antioxidants

Abstract

Abstract: The antioxidation mechanisms, development trend, and relationships between structure and antioxidation property of several main kinds of antioxidants were reviewed. The antioxidation mechanisms including chain termination, peroxide decomposition and metal ion deactivation. The chain terminator including hydrogen donor, free radical scavengers, and electron donor. The work on multi-functional, reactive, and natural antioxidants constituted the developing trend.
